A balance depends on the dish
Choose a specific dish and a recipe that explains its regional or household context. Thailand's official regional food overview itself shows how much changes between north, northeast, central, and southern cooking. A small pantry can support one starting dish well without pretending to cover the entire country.

Separate ingredients from prepared mixtures
A jar of curry paste may already contain salt, shrimp, or other seasonings. Check its label and the recipe's assumed product. A prepared sauce and a plain ingredient need different quantities. For allergies or vegetarian cooking, verify each jar rather than relying on the dish's name.
Tamarind products vary from pressed pulp to diluted ready-to-use liquid and concentrated paste. Follow a recipe that identifies the format. If substituting, add cautiously and taste in the dish. A tablespoon of one product can be much stronger than a tablespoon of another.
Taste with the rest of dinner in mind
A sauce tasted straight from the spoon can seem very assertive, then make sense with plain rice or unseasoned vegetables. Taste it with the food it will accompany. If a dish is meant to be served among several dishes, the meal offers another kind of balance.
Make small adjustments and keep track of them. Extra sweetness may soften the impression of sourness, but it also changes the dish. If the pot is too salty, adding more sugar does not remove salt. Unsalted ingredients or a carefully judged dilution may be more useful.
Buy fresh aromatics with a plan
When a recipe asks for lemongrass, galangal, or makrut lime leaves, find out which parts it uses and which parts are removed before serving. Set aside trimmings according to the recipe rather than treating every fibrous piece as something to chew.
Freeze suitable leftovers in labeled portions if their package or a reliable recipe recommends it. Keep opened sauces according to their storage instructions. A compact, used pantry teaches more than a shelf of jars bought for hypothetical dinners.
Keep in mind
The citrus photograph illustrates acidity and does not depict the Thai aromatics discussed here.
Do not assume fish sauce and soy sauce have identical salt levels or flavors.
