Start with where the coffee will land
The Six Cup Classic CHEMEX combines the brewing cone and serving vessel in one glass object. The stainless Kalita Wave 185 is a separate dripper placed over a suitable mug or server. This difference decides what you need to own and wash before debates about cup flavor become useful.
Choose CHEMEX if you want to carry one carafe from counter to table after lifting out the filter. Choose Kalita if you prefer a compact dripper over a vessel you already use. Check the opening and stability of that vessel first. A dripper that balances awkwardly is a poor match even if both pieces are called coffee equipment.
Translate the cup count into your mugs
CHEMEX lists thirty fluid ounces for the selected six-cup model and defines a cup as five ounces. That is a useful capacity for several small servings, not six large morning mugs. Measure the drinks you normally make before choosing by the number in the product name.
Kalita's page uses more than one serving description for the 185, so this comparison avoids presenting a single cup count as a measured limit. Work from a supported recipe and the amount your server holds. A larger filter basket does not mean it should be filled to the rim with water or grounds.
Treat filters as part of the equipment
The CHEMEX uses its compatible bonded filters; the Wave 185 calls for Wave 185 filters. The number and shape matter. A filter for a smaller Wave or a different CHEMEX format should not be assumed to fit just because it is sold for pour over. Include a reliable supply of the right paper in the ownership decision.
Kalita's selected steel dripper has a flat bottom and three extraction holes. CHEMEX has a conical upper section. Those structures provide different brewing arrangements, but they do not establish a universal flavor winner. Grind, coffee dose, water and pouring still need a consistent recipe if you want to interpret changes in the cup.
Clean for the next brew
CHEMEX permits dishwasher cleaning of the glass after removing its wood collar and tie. Kalita lists its steel dripper as dishwasher safe. The separate server still needs its own care routine. Consider whether you prefer cleaning the narrow middle of a glass carafe or washing two separate brewing and serving pieces.
Choose around serving and storage first, then learn the brewer with the same coffee for several brews. Record the dose, water and timing before making one adjustment. Their useful distinction here is a complete glass serving brewer versus a separate steel dripper that fits an existing setup.
