Give Your Grill a Hot Side and a Place to Wait

Two heat zones let you brown food and finish it more gently. Plan the cooler space before the first piece reaches the grate.

Set up the space before cooking

A hot side cooks over direct heat. An indirect area sits away from the active heat source and gives food a gentler place to finish. On a suitable gas grill that can mean leaving a burner unlit; with charcoal, the arrangement of the coals creates the zones.

Use the method in your grill's manual. Weber's guidance shows several configurations, and the right one depends on the grill. Do not block vents or improvise unsafe barriers. Keep enough grate space available that the indirect area can hold food when several pieces need it together.

Use the cooler space before trouble starts

If a piece has the color you want but needs more cooking inside, move it away from direct heat. If dripping fat causes flames, move food to the safer zone while following the grill's instructions. Waiting until every surface is scorched leaves little room for a useful adjustment.

Different vegetables and cuts may finish at different times. Keep a clean plate ready for finished food, and another for raw food. Do not use the raw-food plate for serving. A spare pair of clean tongs makes that separation easier during a busy cook.

Measure the food, not only the grill

The lid thermometer measures conditions near its location, rather than the center of your dinner. Use a food thermometer for the appropriate safe internal endpoint. Check thicker pieces separately, away from bone when the thermometer instructions require it.

Color and grill marks tell you about the surface. They cannot confirm that chicken is safely cooked through. Read the recipe's resting and serving instructions too. Have the thermometer nearby before cooking so checking a thick piece does not require leaving the grill unattended.

Organize the last ten minutes

Prepare sauces, platters, and sides before the grill becomes crowded. Put the food with the longest cooking schedule on first, keeping room for its final finish. If every item needs direct heat at once, cook a smaller menu or use a second batch.

Write down how much grate space the meal used and which pieces needed a longer indirect finish. Those details make the next cook easier to plan. A bigger fire is not always the answer to a dinner that simply asked for too much simultaneous attention.

Keep in mind

Use grills outdoors in the location and clearances specified by their manufacturer.

Keep safe-temperature guidance specific to the meat, poultry, or seafood you are cooking.
