Spinach and Feta Egg Bake

Squeeze the spinach, whisk the eggs, and give the feta room to season the whole dish.

Frozen chopped spinach is convenient here, but thawing it is only the first step. Squeeze it firmly in a clean towel or press it through a sieve until it stops releasing much water. A wet mound of spinach makes the eggs set unevenly.

The spinach needs to be dry

Break up the squeezed spinach before adding it to the eggs. Small tufts distribute more easily than a compact lump. The quick turn in the skillet removes a little more moisture and helps the spinach mix through the liquid.

Let the cheese help with the seasoning

Feta brings salt as well as tang, so the recipe begins with a modest amount of added salt. Different brands vary. Taste a small piece of cheese while preparing the dish, then adjust the amount of added salt if yours is especially salty.

Use a block of feta and crumble it yourself when possible. Some pieces can remain a little larger so the cut portions have pockets of cheese. For vegetarian cooking, choose feta made with vegetarian rennet.

A firm center without a hard edge

An 8-inch square dish gives this quantity enough depth to cut into portions. A much larger dish makes a thin bake with a shorter cooking time; a deeper, smaller one changes the center cooking time in the other direction.

Check the center with a thermometer and let the dish rest briefly before slicing. The egg mixture should be set throughout, including the center. Serve with a salad, sliced fruit, or toast chosen for your own dietary needs.

You'll need

8-inch square baking dish, Skillet, Mixing bowl, Whisk, Instant-read thermometer

The method

  1. Prepare the spinach

Heat oven to 375 F (190 C). Oil an 8-inch square baking dish. Heat oil in a skillet over medium heat. Add squeezed spinach and cook 3 to 5 minutes, breaking up clumps, until any remaining visible moisture evaporates.

  2. Whisk and combine

Whisk eggs, milk, salt, and pepper in a bowl. Let the spinach cool slightly, then stir it and the feta into the eggs. Pour into the prepared dish and spread the solids evenly.

  3. Bake to a set center

Bake about 22 to 28 minutes. Check the center and several other places with a thermometer; continue until the egg mixture reaches 160 F (71 C) and is set throughout.

  4. Rest and slice

Rest 5 minutes, then cut into four portions with a clean knife. Serve warm.

A few useful notes

Choose feta with vegetarian rennet, and check dairy and seasoning labels for gluten-free cooking.

Refrigerate promptly in shallow containers and use within 3 to 4 days. Reheat leftovers to 165 F (74 C).

Thawing the spinach in the refrigerator is advance preparation and is not included in the active time.
