Begin with the bean and its label
For cannellini and other kidney beans, food safety changes the opening steps. FDA guidance calls for at least five hours of soaking, discarding the soaking water, and boiling in fresh water for at least thirty minutes. A slow cooker is unsuitable for that initial cooking.
Keep soaking practical
Place beans in a large bowl with enough water to stay well covered as they expand. For an overnight soak, refrigerate the bowl. Drain and rinse before cooking, then move them to a pot with fresh water a few inches above the beans.
An onion half, garlic cloves, and a bay leaf flavor the cooking liquid. Keep the seasoning simple if you want the beans for several meals. Avoid adding tomatoes or lemon at the beginning; add those when making the final dish, after the beans are tender.
Boil first, then check for a tender center
Bring the pot to a full boil and follow the safety steps appropriate to your beans, including the thirty-minute boil for kidney beans. Add hot water as needed so the beans remain covered. After that stage, reduce to a gentle simmer.
Check several beans, not just one. Their centers should be soft and creamy, without a hard or chalky spot. Old beans can take much longer than a package estimate. Continue cooking and adding water rather than accepting a firm center because the timer has finished.
Store beans with a little of their broth
Save the cooking liquid for soup, pasta sauce, and beans on toast. Keep enough with the beans to prevent a dry container, and freeze extra broth in small portions if it suits your cooking. Remove the onion, garlic skins, and bay leaf first.
Divide cooked beans into shallow containers and refrigerate promptly, within two hours or within one hour above 90 F. Use refrigerated leftovers within three to four days or freeze them. Label the containers with the date and bean type so the next meal begins with a clear choice rather than an unidentified tub.
Keep in mind
This guide includes kidney-bean precautions because cannellini are white kidney beans.
Do not rely on a low-temperature slow cooker to cook raw kidney beans safely.
